Here's something to try, if you're looking for something a bit different in a weekend breakfast:

Preheat oven to 375

Peel, core and slice two apples, your choice of variety (I used gala apples this a.m.)

Place apple pieces in a baking dish

Very lightly dust with flour (thickens the resulting juice so it clings to the apples to enhance flavor)

Add a couple small pats of butter to stave off scorching and soften the sauce

Sparingly sprinkle with brown sugar or honey (the apples are plenty sweet, just a little bit will be enough)

Sprinkle with powdered ginger and cinnamon to taste

Top it all off with a couple of tablespoons of real bacon bits

Bake at 375 for 20 minutes

Remove from oven and stir to coat the apples evenly, and enjoy!

sounds good! i have a french toast recipe that is amazing though i make it the same way you make your apple dish: sans any real measuring. so while id love to post it here, i cant really since the number of eggs even varies depending on the batch i make! Here's what i put in it: eggs flour sugar vanilla milk i try to make a mixture that is thick, but not too thick, kind of like thick pancake batter? then i place bread slices in a pyrex dish and pour the batter over them and let sit overnight. Serve em up in the morning. For an extra large and extra moist helping, layer bread in the pyrex dish so two slices are on top of each other. when sitting overnight, they will fuse together and when cooked there will be a very moist, almost (but not quite) gooey center. Yum!

Although, since we're onthe topic of food. Last night me and Marcia had our 4 year anniversary. We went out to a really fancy restaurant that we reserve for only once or twice a year for special occaisons.

It's called Cafe' Escadrille & it's in Burlington. We had stufffed mushrooms for an appetizer. She ordered the prime rib. while I had my usual:

Steak & Lobster
Grilled 8 oz. tenderloin steak with Bordelaise Sauce. Served with a baked stuffed Maine lobster tail.



I can not even begin to describe how awsome this restaurant is. Just incredible. God I'm so hungry now.


The funniest thing was both of us laughing as I pulled out ono Rt.3 and left the parking lot... amist the Cadillac Escalades, BMW 7s, Range Rovers & a new Rolls Royce is this 1984 Datsun wiht a squeaky left rear wheel bearing.

Marica just laughed and said "well, we sure won the prize for shityest car in the whole parking lot award". I laughed and said I saw two Camrys in the back and she was like "They were brand new!" To which I replied "I'd STILL rather have a 146K mile Datsun instead of selling my soul."

That was a classic, thanks for reposting, Harley. Didn't we come up with some funny captions for that?

The bacon bits add a bit of salty/savory to the sweet apples. It's a great combination.
